Frosting - Cream Cheese Honey 

This uses 'Gina Marie' type natural cream cheese without any stabilizers, and raw natural honey, so the method is quite different from most frosting recipes.

~Single making 1 1/2 cups
Mix with powered hand whip (too small for bosch mixer):
8 oz cold unsalted butter
3 oz honey (only raw natural honey, which is much thicker than honey you buy at a store)
Beat carefully not to bend the whip. Just mix, let rest as the honey dissolves into the butter, mix again as it warms a bit and comes together. Mix until very smooth.

Next, VERY GENTLY by hand ONLY  work in:
4 oz soft cream cheese (Gina Marie or Sierra Nevada)

Add to taste:
pinch of salt
vanilla to taste


~Double making 3 cups
Mix in bosch with whips:
16 oz cold unsalted butter
6 oz honey
Beat carefully not to bend the whip. Just mix, let rest as the honey dissolves into the butter, mix again as it warms a bit and comes together. Mix until very smooth.

Next, VERY GENTLY by hand ONLY work in:
8 oz soft cream cheese (Gina Marie or Sierra Nevada)

Add to taste:
pinch of salt
vanilla to taste

~Chocolate
Add BEFORE THE CREAM CHEESE  to taste:
cocoa powder Or/And
melted and cooled chocolate chips

~If you add more cream cheese than this, the frosting is still yummy but isn't a smooth frosting consistency.
