Granola - Soft Granola 

Baked in a covered hotel pan they are steamed.

~In 4 inch deep hotel pan combine:
56 oz (16 c) rolled oats
5 oz (1 c) whole wheat pastry flour

Stir in to moisten:
16 oz milk

~In saucepan heat:
20 oz honey OR maple syrup
15 oz (2 c) coconut oil
Bring to a simmer and whisk to fully combine.
Whisk in:
2 t salt

Pour over oat mixture and stir to combine.

Bake covered at convection 350* about 30 minutes, stir well, bake 15-30 more minutes until it loses its raw pasty flavor. Finish with lid off until golden.

Remove lid, stir and cool.

Store in glass jars in fridge. Maybe reheat on baking sheet to restore texture, if you care.
