Pancakes - Pumpkin 

Just for you, Lindsey.

~Combine in blender:
15 oz can pumpkin puree
2 large eggs
2 tablespoons melted butter
1/2 teaspoon vanilla extract
1 tablespoon pure maple syrup
1 ½ cups old fashioned rolled oats
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt

Blend until smooth. Fry in coconut oil.
