Cookies - Trail Mix 

Thanks to Esther for making these. Originally called Oregon Trail Cookies from BRM. I have replaced brown sugar with sucanat so they have no highly processed sugar.

In bosch with cookie paddles mix:
4 oz softened unsalted butter
4 oz peanut butter
10 oz sucanat
2 oz honey

Beat in:
2 eggs
1 T vanilla

Measure and stir together:
12 1/2 oz whole wheat pastry flour
1 1/2 c rolled oats
2 t cinnamon
1 t baking soda
1 t baking powder
1 t salt
Mix into butter mixture until just combined.

Gently mix in:
1 c almonds or hazelnuts
2/3 c pumpkin seeds
1/4 c flaxseeds, if I have them.
1 c dried cranberries or dried cherries

Refrigerate to hydrate if you have time.

Scoop about 2 T onto baking sheet and flatten slightly.

Bake at convection bake 350* 10 minutes. Cool on pan a minute or two then cool on wire rack.
