Pasta - Spaghetti with Roasted Tomatoes 

Yet another spaghetti recipe! Now I have canned roasted or reduced tomatoes, so here's a recipe using them.

~In 15 qt brazier pan
Saute onions in a little fat (tallow or lard) and salt IF the onions are yellow onions.
IF using sweet onions then saute only very briefly. I think they lose flavor if you cook them too long.

Add:
4 lb ground beef (hopefully salted in advance)
Saute just until it is losing its pink.

Add:
Dried basil
dried fennel
fresh garlic
2-4 qts home canned roasted or reduced tomatoes

Heat just to a simmer. Hold until you want the sauce.

~Cook
2 lb noodles in about 5 qts water and 2 T salt.

~For a crockpot for a potluck
Fill crockpot 1/2 full of prepared sauce
Cook ONLY 1 lb noodles just until barely al dente.
Drain mostly and put atop the sauce and heat.

Stir into sauce just before serving.
Should serve 10-15.
~In 5 qt allclad casserole pan
