Fruit Cobbler - Coffeecake quickly mixed 

Makes a large sheet pan and is mixed quickly.

~Dice fruit onto parchment
Apples, apple-cranberry, apple-rhubarb, apple-pear
~Makes 2/3 size sheet pan
Use parchment so it isn't sitting on the aluminum.

In large bowl mix:
18 oz milk
16 oz whole wheat pastry flour
Let rest and mix until smooth like a loose batter.

Melt:
6 oz coconut oil

Whisk in:
6 oz maple syrup or honey
2 eggs

After flour has hydrated stir oil mixture in, folding and resting until it is smooth.

Gently mix in:
1 t salt
1 t baking soda
2 t baking powder

Pour over fruit on the parchment.

Bake at convection 375* 15 minutes or so.
