Popcorn - Caramel Corn, Maple or Honey 

Just coconut oil, butter and maple syrup or honey! No corn syrup! With organic popcorn, hopefully a delightful treat and keeps our tummy happy too.

~In whirly pop:
about 3-4 T coconut oil
scant 1/2 c organic popcorn kernels
Pour into very large stainless steel bowl.

Pop again using same ratio (1 c popcorn total). Take out any unpopped kernels.

Add to the popcorn:
1 c raw peanuts

~In 3-4 qt pot
4 oz unsalted butter
12 oz maple syrup OR honey
Boil untiil it reaches 225*.

Remove and stir in:
1 t salt
1/2 t baking soda

Quickly pour over popcorn and stir to fully coat.

Bake at convection 200* for 60 minutes, breaking it apart and moving it around every 20 minutes. Bake until dry. Cool thoroughly and store airtight.
