Biscuits - Shortcake A similar recipe to sourdough scones, but baked in a pie dish and a little sweeter, like a cake. ~Two pie dishes
In bosch bowl mix well - let rest and mix until it is very smooth: 10 oz starter 12 oz milk 4 eggs Mix dry ingredients and cut in butter into food processor, because only one recipe fits at a time. Add to wet ingredients and process second batch. Mix with dough hook just until it comes together and flips several times. Scrape into two oiled pie dishes, brush with milk or cream and sprinkle with turbinado sugar to make a crackly shiny crust. Bake at convection bake 375 for about 20-25 min until golden brown. ~One pie dish
In large bowl mix well - let rest and mix until it is very smooth: 5 oz starter 6 oz milk 2 eggs In food processor mix: 10 oz whole wheat pastry flour 1 T baking powder 1/4 c sugar 1 t salt Cut into small pieces and process in: 4 oz cold unsalted butter. Turn into starter mixture and mix with silicone scraper, pressing and folding, stretching and folding in the bowl. Rest and work gently until it is smooth and perky. Rest periods are very important here so you don't overwork it. Scrape into oiled pie dish, brush with milk or cream and sprinkle with turbinado sugar to make a crackly shiny crust. Bake at convection bake 375 for about 20-25 min until golden brown.
