Fish - Salmon 

I've bought a salmon share of sockeye salmon. So here's my ideas.

~Be sure to smoke extra for breakfasts or salmon sandwiches or soup!

~Salmon Hash or Deconstructed Salmon Patties
Saute very small fresh bread crumbs in butter with diced carrots, celery, onion, garlic and maybe peppers. Add the salmon and separate into flake size. Salt and sprinkle with paprika to taste.
Serve with tartar sauce.
~Smoke them
about 1/2 hour before smoking lay salmon fillets on parchment skin side down.
Salt and pepper generously
sprinkle with brown sugar or turbinado sugar
sprinkle with paprika

I now have perforated grill baskets, so smoke on the parchment right on them.

Smoke at 180* - 225* about 60-120 minutes until it flakes to taste. Let sit a bit then enjoy!
