Soup - Thai Salmon Chowder 

Especially good with already smoked salmon - it really keeps its shape in the soup when added last. Using coconut milk for creaminess and pumpkin from the freezer this makes a great quick make soup.

In pot saute:
onion
fat
lightly salt
garlic
fresh ginger
-sweet potatoes if you aren't using squash from the freezer
-pumpkin or squash from freezer

Add:
turmeric
nutmeg
clove
coriander
cumin
chili powder
thai red curry paste (I will add my harisa paste)
full fat unsweetened coconut milk
peanut butter
fish sauce
chicken broth

Simmer
Blend with stick blender

Add flaked salmon, or add it right to your bowl and ladle soup over it.

Check seasonings and add:
brown sugar
curry powder to taste

Serve with hot sauce and lime and cilantro as you have them!

~You could put firm tofu into the soup instead of salmon. Salt and pepper and add curry powder and brown sugar. Saute the tofu then dice and add.
