Gravy for Biscuits and Gravy Made for a large group! Saute in 14 qt brazier:
about 1/4 c oil, bacon fat, butter, or lard (because my sausage never has enough fat to combine with the flour) 6 lb ground sausage onions bit of garlic (1/4 c all-purpose flour each lb sausage) 1 1/2 c flour for these 6 lb salt to taste Stir in: (2 c milk per lb sausage) 12 c (3 qts) milk Stir until smooth and thickened. As it cooks add: salt to taste pepper to taste Add just a bit of: nutmeg allspice cloves Add salt or pepper or garlic or more fat to taste. If it tastes 'empty' try adding more fat.
