Pasta - Sweet Potato White Sauce Creamy sweet potato sauce with arugula wilted into the finished pasta. In casserole type pan:
1 stick unsalted butter onion garlic carrot celery Everything salted to taste Saute until flavorful. Add: 1 T white flour Saute until flavorful again. Add: already baked sweet potato Saute Add more butter if you need. Add milk until sauce is quite thin. Boil pasta right in the thin sauce, which will thicken it up and cling to the pasta. Chop arugula and wilt into the sauce. Season with lemon juice and pepper.
