Quick Bread - Banana 

My original recipe was from Aunt Izzy but changed to be 'perfect'. Well, here's the new version too.

~That was then, from Aunt Izzy:
Mix:
2 qt bananas
4 c white sugar
1 c melted butter
8 eggs
1 T vanilla

In separate bowl mix together:
8 c (40 oz) spelt flour
2 T baking powder
2 t soda
2 t salt

Gently mix dry ingredients into wet ingredients.

Bake 1 hour at 350* in 4 loaf pans.    

***Half recipe (1qt bananas) makes 12 small loaves for gifts.
~This is now:
Makes 5 big loaves (or 4 long commercial pan size) from 2 qts frozen bananas -
optional: Toast 6 c walnuts in the oven as it preheats.

Stir together:
50 oz spelt flour (10c)
1 T baking soda
1 T salt

Melt and cool 1 lb unsalted butter and beat in:
10 eggs
26 oz sugar (3 3/4 c)

Stir in:
60 oz banana
10 oz plain yogurt
2 T vanilla

Gently fold dry ingredients into wet. Fold then let rest a minute a few times so you don't have to mix too much. Overmixing will inhibit rising and make it gummy. Fold in walnuts while the last of the flour patches are incorporated.

Bake in 5 loaf pans at convection bake 350* for 50-60 minutes.

~Half Recipe for 3 loaves from 1 qt frozen bananas -

Stir together:
25 oz flour
2 t baking soda
2 t salt

Melt and cool 2 sticks unsalted butter and beat in:
5 eggs
13 oz sugar

Stir in:
30 oz (1 qt banana)
5 oz yogurt
1 T vanilla
