Cookies - Latvian Peppercookies 

Crispy and spicy dark sugar cookies. Dough is stiff and easy for children to handle.

In small saucepan melt karo, honey, sugar, and butter, mixing with whip.  Heat only until just melted.  In mixer with dough hook mix 20 oz flour with spices and salt.  Mix in hot butter mixture.  Measure 10 oz flour with powder and soda (mix well with fork or sift).  When mixture has cooled (thoroughly to room temperature) (This takes a couple of hours.), mix in egg yolks and flour mixture until dough is very hard, shiny and doesn't stick to fingers.  (You may need to add the rest of the flour - 5 more oz) May have to remove from mixer and knead by hand to get the rest of the flour mixed in. Roll out on lightly floured surface and use cookie cutters.  Placing on lightly oiled cookie sheet, bake at 350* 9-11 minutes depending on thickness.  Should be only light golden on edges.  (Watch carefully, they burn quickly!)  Remove to wire racks for cooling.

*Molasses make this a really dark cookie and honey a really light cookie. They look pretty together, actually.
***1 c karo syrup (I can't find any non-GMO corn syrup so trying a simple syrup substitute) ***1 c cane sugar boiled with 1/4 c water
6 oz (1/2 c) honey or molasses
1 lb brown sugar (2 c)
3/4 lb butter
2 egg yolks

35 oz (7 c) white all purpose flour
1 t cinnamon
1/4 t pepper
1 t cloves
1 t nutmeg
1/2 t salt
1/2 t baking powder
1 t baking soda
