Cookie Bars - Brownies Perfectly moist but not gooey! Bake in aluminum pans for even baking. This recipe is quite durable and less crumbly. I like the candy-like chewyness.
Makes one 9x13 pan~ In a 4 qt pot melt: 2 sticks unsalted butter When melted, remove from heat and add in: 6-8 oz unsweetened chocolate bar until melted. (whatever size your bar is) Beat in: 21 oz (3 c) sugar Beat in: 4 eggs 1 T vanilla Mix in: 1 oz (1/4 c) baking cocoa Mix together then stir in: 10 oz (2 c) white flour 1 scant t salt Pour into 9x13 aluminum cake pan lined with parchment. Bake convection bake 350* about 30-35 minutes. OR put into a half sheet baking pan and bake 20-25 minutes. Bake to 185* using an instant read thermometer. X2 recipe for TWO 9x13 pans~ In 8 qt pot melt: 4 sticks (1 lb) unsalted butter When melted, remove from heat and add in: 16 oz unsweetened chocolate bar until melted. Beat in: 42 oz (6 c) sugar Beat in: 8 eggs 2 T vanilla Mix in: 2 oz (1/2 c) baking cocoa Mix together then stir in: 20 oz (4 c) white flour 2 scant t salt x4 recipe for FOUR 9x13 pans~ In 4 qt pot melt: 2 pounds (8 sticks) unsalted butter When melted add in: 32 oz unsweetened chocolate bar until melted, you have to leave it on a very low heat. Be sure not to scramble the eggs by putting them into too warm chocolate mixture! In bosch bowl with wire whips mix: 16 eggs 1/4 c vanilla Mix in: 84 oz (5.25 lb) sugar Mix in: 4 oz (1 c) baking cocoa This will fill the bowl. In the very large tupperware bowl mix the cooled chocolate mixture and the egg mixture together. Mix together then stir in: 40 oz (8 c) white flour 1 T salt Thoroughly stir the flour into the batter. It takes some muscle and patience, but the staggering amount of brownies is worth it! This is more cake-like and delicate.
1 c unsalted butter 2 c sugar 4 eggs 2 t vanilla 4 oz (1 c) cocoa 5 oz (1 c) white flour 1 t baking powder 1/2 t salt In large pan melt butter over medium heat. Remove from heat and stir in sugar, eggs, vanilla and cocoa (with whip). Beat till smooth. Mix in flour, powder and salt. Mix thoroughly. Spread in greased cookie sheet (with sides), like bar cookies. Bake 25-28 minutes at 350*. Cut while still a little warm.
