Pistachio Pudding Salad 

A creamy yet tangy fruit salad.

1 large can pineapple tidbits or
     sliced pineapple cut small,
     well drained
1 large can crushed pineapple,
     well drained
1/2 to 1 c finely chopped nuts
a cup or so small marshmallows
1 pint whipping cream
1/2 c powdered sugar
1 t vanilla
1 pkg Instant Pistachio Pudding
16 oz cottage cheese

Whip whipping cream in mixer with whips until stiff peaks form (watch it as it whips, but do not turn off mixer until it is fully whipped, because it is a better consistency if it is whipped all at once).  Beat in powdered sugar and vanilla.  Remove to another bowl.  In mixer bowl mix dry pudding with cottage cheese.  Stir in pineapple, nuts, and marshmallows if desired.  Carefully stir in whipped cream.  Refrigerate.
