Ciabatta - slow rising 

Made without any commercial yeast, these loaves are full of flavor.

In mixer with dough hook mix:
8 oz freshly mixed starter
28-30 oz warm water
16 oz artisan white bread flour
16 oz all-purpose white flour
1 T salt

Mix until shaggy and sticky. Scrape as needed.

Rest 1 hour.

Knead 5-10 minutes until dough is shiny and smooth like taffy.

Divide dough into two (34 oz each) bowls to stretch and fold about 4 times 30 minutes apart. (2 hours total).

Dampen the top and cover to rise 7-10 hours until double or triple in size.
