Soup - Moroccan Sweet Potato 

Sweet Potato and lentil with warm flavorful Moroccan spices. Serve it with tangy sourdough flatbread.

In large pot saute:
2 large carrots
2 onions
in olive oil and salt to taste

Add and saute briefly:
1 whole bulb of garlic
2 T minced fresh ginger

Add more oil and add:
2 T cumin
2 t coriander
2 t turmeric
2 t paprika
2 t cinnamon
Saute very briefly.

Add then bring to a light boil then simmer:
3 qts chicken broth
1 qt tomatoes
sweet potatoes
2 c (1 lb) lentils, I like black or green
salt to taste
Simmer until lentils are tender about 30 minutes.

Add more spices, salt, and olive oil to taste!

Serve with cilantro if you have it.
