Biscuits - for biscuits and gravy 

Makes 16 large square biscuits or 32 triangles.

In food processor with blade combine:
8 oz whole wheat pastry flour
1 T baking powder
1 t salt
2 sticks unsalted butter, cold

Turn into mixer with dough hook 2 times, making 2 recipes (4 sticks butter total).

Put each recipe into bosch bowl and put in freezer while you mix the rest.

Knead in:
*32 oz fed or unfed sourdough starter
(100% hydration starter)
     ****If I only have my stiff starter make it this way:
20 oz stiff starter
10 oz warm milk to soften the starter
then proceed the same way.

*Add ice water 1 T at a time just as you would with pie dough, if it is too stiff. Knead gently a few turns in mixer.

Pat and roll into a 1 inch tall square which you will cut into 16 squares then each in half to make triangles.

Bake 15-20 minutes at convection bake 425*.
