Pizza - Quick Mix 

Just stirred together by hand and I pat it onto TWO 2/3 large sheet pans for the grandkids.

In large bowl dissolve:
2 T active dry yeast
21 oz warm water
a pinch of sugar
Let sit about 15 minutes until bubbled and expanded.

2 oz olive oil
38 oz all-purpose flour
2 T salt

Allow some minutes to hydrate as you mix. Mix and add more water as needed to make a soft but a bit shaggy looking dough.

Rise about 90 minutes until very puffy.

Lightly oil TWO 2/3 large sheet pans. Divide and stretch onto pan. Cover with damp towel.  Let sit 15 minutes, stretch again. Sit, stretch until it comes to the corners.

Rise until noticeably puffy, about 90 minutes.

Bake 450* convection roast about 10 minutes until golden.

Top with cheese and meats with sauce on top! This keeps it from becoming soggy.

Bake about 10-15 minutes more.
