Frosting - Easy Chocolate 

Double for two cakes, which I usually make.

2 c (1 lb) unsalted butter
30 oz powdered sugar
4 oz cocoa powder
4 oz heavy cream
1/2 t salt
2 T vanilla
In mixer with whips beat until creamy:
1 cup unsalted butter, softened to room temperature

Beat in:
15 oz (3 1/2 c) confectioners’ sugar
2 oz (1/2 c) unsweetened natural or dutch-process cocoa powder
2 oz (4 T) heavy cream or milk
1/4 teaspoon salt
2 teaspoons pure vanilla extract
Thoroughly beat until light and fluffy
