Frosting - Lemon Buttercream 

Measure and mix carefully and you'll be amply rewarded!

In bosch with whips beat
1 c unsalted butter at room temp
until creamy, nearly 2 minutes.

Beat in:
20 oz powdered sugar
1 1/2 oz fresh lemon juice
1 oz heavy cream
2 t lemon zest
Beat 3 minutes until very light and creamy.

Taste and add:
pinch salt

Add up to 1/2 c more powdered sugar or another Tablespoon cream to adjust the texture.
