Quick Bread - Banana 

4 huge loaves of moist perfect bread. My original recipe was from Aunt Izzy but changed to be 'perfect'. Well here's the new version too.

That was then:
2 qt bananas
4 c white sugar
1 c melted butter
8 eggs
2 T baking powder
2 t soda
2 t salt
1 T vanilla
8 c spelt flour
  (40 oz spelt grain)
This is now:
Makes 5 big loaves from 2 qts frozen bananas -
optional: (6 c walnuts)

Stir together:
50 oz spelt grain ground into flour (10c)
26 oz sugar (3 3/4 c)
1 T baking soda
1 T salt

Melt and cool 1 lb unsalted butter and beat in:
10 eggs

Stir in:
60 oz banana
10 oz plain yogurt
2 T vanilla

Makes 3 loaves from 1 qt frozen bananas -

Stir together:
25 oz flour
13 oz sugar
2 t baking soda
2 t salt

Melt and cool 2 sticks unsalted butter and beat in:
5 eggs

Stir in:
30 oz (1 qt banana)
5 oz yogurt
1 T vanilla

This is now instructions:
Preheat oven to bake 500* (turn down later). Toast the walnuts gently watching carefully. Grind grain then mix in sugar, soda and salt. Melt butter in very large tupperware bowl. Whip in eggs. Measure in banana and yogurt. Whip vanilla in until well mixed. Make sure dry ingredients are also very well mixed. Use parchment for bottom and long sides of 5 loaf pans. Spray the ends. Gently fold dry ingredients into wet in the tupperware bowl. Fold then let rest a minute a few times so you don't have to mix too much. Overmixing will inhibit rising and make it gummy. Fold in walnuts while the last of the flour patches are incorporated. Pour into prepared pans and bake at convection roast 350* for 50 minutes or a little more. Don't let oven be on preheat, that's why it is overheated, to allow time to put all 5 loaves in.


That was then instructions:
Mix bananas, sugar, oil and eggs in mixer bowl with whips.  Mix in baking powder, soda, vanilla and flour.  Mix until well mixed.  Bake 1 hour at 350* in 4 loaf pans.     ***Half recipe (1qt bananas) makes 12 small loaves for gifts.***
