Pasta - Sweet Potato Pasta Sauce 

Sweet potato and heavy cream blended into your pasta sauce, with or without tomatoes!

For these recipes you can use baked sweet potatoes for the most flavor.
You could also peel, cube and steam in salty water. When soft remove lid and add an appropriate fat, and cook until sweet and very reduced.

Do this idea after the fall squashes and pumpkins are not available anymore.

Sweet potatoes are available fresh from the ground much longer.

1 large sweet potato
30 ounces whole type tomatoes - not reduced
1/4 cup heavy whipping cream
2 tablespoons extra-virgin olive oil
salt
Freshly ground black pepper
basil
Parmigiano Reggiano - grated

~idea two Sweet Potato Alfredo
8 oz dry fettuccine noodles
1 medium sweet potato approx. 1/2 cup pureed
1 cup whole milk
1 TBSP butter
1 clove garlic mashed and minced to 1/2 tsp
1/4 tsp salt
1/2 tsp garlic powder
2 tsp fresh lemon juice
1 tsp chopped parsley basil or spinach are great too!
1 cup freshly grated Parmesan cheese
2-4 TBSP freshly grated Parmesan for topping
salt and pepper to taste
