Muffins or Coffee Cake - Overnight 

This recipe uses an overnight (or 8 hour) ferment.

~Make the overnight ferment
8 oz sourdough starter, ripe or discard
10 oz whole wheat pastry flour
8 oz milk
4 T unsalted butter, melted and cooled (OR 2 oz coconut oil)

~Add in the morning
Whip together until smooth:
1 egg
6 oz  white sugar or honey
Stir into batter.

Sprinkle in:
3/4 t salt
1 t baking soda
