Quick Dough - Hydrated 

This recipe can ferment for 8-12 hours or just allow time to rest as you mix it together. Either way, the flour hydrates with the milk and starter.

~Make the topping (optional, of course).
4 T melted unsalted butter (OR 2 oz coconut oil)
1/2 c rolled oats
1/4 c white flour
1/4 c washed raw sugar
1/4 t salt
8 oz roughly chopped walnuts or pecans
Mix all together very thoroughly.

~Add some things on the top or inside
-fresh or fresh frozen cranberries
-fresh or frozen blueberries
-diced apples
-diced pears
-diced figs or date
-a cranberry sauce layer

~Bake in:
-24 muffins using smaller scoop
-one 9x9 inch square pan
-5 or 6 small loaf pans
-12 large muffins (2 med scoops ea.)
-two 10 inch round pans (making a very short coffeecake, but with lots of topping.)
-one 9x13 pan which makes a short bar-like coffeecake. Liberally cover with blueberries on top. If you don't put the nut-oat topper on it will be less crumbly to eat. You can drizzle a *lemon glaze for a pretty finish and really intense flavor!

*Lemon glaze: equal weight fresh lemon juice and white sugar. Boil and stir then boil gently until thickened a bit.

~Double recipe makes 24 large muffins (2 1/4 x 1 7/8 cups) in my silicone pans which can set on a 2/3 sheet pan so you can quickly get them into the oven. Each muffin uses two scoops using my two medium sized scoops, one smaller one bigger.

~Bake at convection bake 375* (OR don't use convection if you want to make sure the tops don't blow crooked.) about 15-45 minutes, until an instant read thermometer reads 190*- 200*.
~Make the overnight ferment (or just allow as little as a 30 minute rest)
8 oz sourdough starter, ripe or discard
12 oz whole wheat pastry flour
10 oz milk
(This will be dough-like but should not be too stiff. Add a little extra milk as needed to loosen it a bit. The freshness of the starter is what makes this variable.)

~Add in the morning
Whip together until smooth:
4 T unsalted butter, melted and cooled (OR 2 oz coconut oil)
1 egg
6 oz  white sugar
Stir into batter.

Sprinkle in:
3/4 t salt
Mix thoroughly.

Sprinkle in:
1 t baking soda
Mix gently.
