Vegetable - Spiced Sweet Potato and Beet 

I am making this without the lentils because I don't have them.

I am making this as a braise over rice. Using already roasted beets and will roast the sweet potatoes and carrots in cubes.

I'll use chicken broth. Roast in coconut oil if vegetables are not already roasted.

Use coconut cream not milk. Thicken the broth and coconut cream with flour and coconut oil.

Could do cumin, cinnamon and black pepper with the coconut milk.

Could do cumin, paprika and coconut milk.

Another idea: 2 tablespoons of freshly minced ginger
2 limes, juiced
1 scant teaspoon of cumin
1/2 teaspoon of coriander
1/2 teaspoon of cayenne pepper
1 bay leaf

Another, garlic, jalapeno, ginger, red wine vinegar to finish

Another, 1 tsp turmeric powder
1 Tbs cumin
¼ tsp smoked paprika
½ tsp crushed red pepper flakes, or to taste
1 pound potatoes (about 2 medium), peeled and cubed
1 pound medium sweet potatoes (about 2 medium), peeled and cubed
2 medium carrots, sliced
2 medium fresh beets, peeled and cubed
2 cartons (32 ounces each) vegetable broth
2 cups dried lentils, rinsed
2 teaspoons paprika
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground allspice
2 cups coconut milk
