Cookie Bars - Peanut Butter 

Soft chewy easy bar cookies! Top with a little salt for a fresh peanut taste!

2 t salt
10 oz soft white wheat (2 c whole wheat pastry flour)

*optional chopped peanuts - about 2 cups
1 c unsalted butter, melted and cooled
2 c (18 oz)  peanut butter
2 lb brown sugar
8 eggs
1 T vanilla
2 T corn syrup

In mixer with cookie paddles, stir butter, peanut butter, and brown sugar together.  Mix in eggs, vanilla and corn syrup.  Mixture should be smooth and creamy.  Mix salt and flour together then stir in.  Gently mix in peanuts.  Spread into 2 aluminum 9x13 cake pans lined with parchment.  Bake at 350* 20-25 minutes. Do not overbake, they are good a little gooey.
