BBQ - Ketchup 

Using my roasted tomatoes for a zippy fresh tasting ketchup! Yum!

Saute some lightly salted onion in lard or meat fat, or olive oil if you don't have these.

Saute in some garlic.
Add more fat.

Saute in roasted tomatoes.

*Optional, depending on the sweetness of your roasted tomatoes:
*Add a little light brown sugar to taste.

Simmer gently to drive off more liquid until it is as thick as you want.

Stir in some cider vinegar to taste. Simmer only briefly.

Immersion blend until smooth.
