Pork - Spicy Sweet Potato and Orange Stew 

Made with some of my freezer friends and left-over pork, which I do on purpose!

To serve:
On the plate spread sweet potato (unless they are diced, then they just go into the stew).
Pile on quinoa.
Spoon on the stew.
Dice on avacado, which has been sitting with salt and a bit of lime on it.
Squeeze lime over the top.
Top with cilantro if you have it.
Yum Yum!
In allclad brazier saute:
1 big onion, lightly salted in
pork lard

Add:
1 pint homemade enchilada sauce
orange zest and diced (peelings cut away) orange
1 can Trader Joe's corn
my dehydrated and frozen roma tomato quarters, diced smaller
pork roast, cut small
Warm all together gently.

Cook quinoa:
1 c quinoa (4-6 servings)
2 c water
1/2 t salt

Warm up already baked sweet potatoes, or butternut squash. (You could use diced and roasted.)
