Dehydration Notes 

Don't forget to keep the dehydrator working.

I cut peaches and pears into fourths and trimmed them to not be too high for the dehydrator trays.

This left large pieces. I put them in the evening so they wouldn't dry too much overnight.

***Take them out when they are quite dry but have some jammy wetness left. Put them into a jar to allow the moisture to redistribute. After a few days put them back into the dehydrator to dry the outside. Amazingly this only takes 30 minutes to an hour or two.

Only dry them until they are still soft and pliable. Then back into the jar to redistribute the moisture before transferring them to the freezer.

I dried tomatoes the same way and kept their skins on.
