Main dish - Tortellini Salad 

Inspired by a beautiful salad I ate at New Seasons! And thanks to Trader Joe's which has all the ingredients. I like it warm as a main dish.

Roast:
Butternut squash or sweet potatoes, cut into bite-sized pieces, and onions* in olive oil and salt and pepper to taste.
Allow to sit about 15 minutes before taking them off the pan to let them firm up to stand up to stirring.

Toast walnuts or pecans.

Coarsely grate parmesan cheese.

Boil cheese tortellini in well salted water and drain any water left. Sprinkle with vinegar while warm so the pasta absorbs the vinegar.

*OR macerate diced onion in the vinegar for the vinaigrette.

Make a vinaigrette:
olive oil
vinegar (whatever type you have)
dijon mustard (or whatever you have)
salt and pepper to taste

Toss warm squash or sweet potatoes and onions with the warm tortellini and vinaigrette. Stir in dried cherries.

Toss arugula with vinaigrette so it is well coated.

Lay dressed arugula in salad bowl. Layer in the squash and tortellini mixture. Sprinkle walnuts (or pecans), and parmesan cheese on the top.
