Tortellini Salad 

Inspired by a beautiful salad I ate at New Seasons! And thanks to Trader Joe's which has all the ingredients. I like it warm as a main dish.

Roast:
Butternut squash or sweet potatoes
and onions in olive oil and salt and pepper to taste.
Allow to sit about 15 minutes before taking them off the pan to let them firm up to stand up to stirring.

Toast walnuts (if I haven't soaked them already)

Coarsely grate parmesan cheese

Boil cheese tortellini and drain.

Make a vinaigrette:
olive oil
vinegar (whatever type you have)
dijon mustard (or whatever you have)
salt and pepper to taste

Toss warm squash or sweet potatoes and onions with the warm tortellini and vinaigrette.

Stir in dried cherries, walnuts, and parmesan cheese. Lastly stir in baby arugula.
