Hot Chocolate Rich thick hot chocolate. Easy to make and very rewarding. ~For 1 gallon hot chocolate:
3 c water 8 oz (1 c) unsweetened cocoa powder 7 oz (1 c) sugar 12 oz dark chocolate bar or chips 1 stick unsalted butter Stir in milk or milk/cream to make a gallon of hot chocolate. ~Stir in some vanilla and maybe a bit of salt to taste. ~For lots of base - yum yum: 6 c water 16 oz unsweetened cocoa powder 14 oz sugar 24 oz dark chocolate bar or chips 2 stick unsalted butter Stir in 2-4 cups heavy cream or mixture milk/cream. Stir in some vanilla and maybe a bit of salt to taste. Keep in fridge to scoop out what you need anytime. Bring to a boil:
1 1/2 c water Whisk in: 4 oz (1/2 c) unsweetened cocoa powder 3 1/2 oz (1/2 c) sugar (washed raw sugar is good) 6 oz dark chocolate bar broken in pieces or chips 1/4 c unsalted butter Stir with a scraper frequently and when it is bubbling regularly adjust heat down to a very gentle bubble. Cook stirring occasionally about 15 minutes. Taste during this time as the chocolate matures from a starchy flavor to rich a creamy thick sauce! Stir in: 8 c milk or milk/cream combination and heat until warm. Add a little vanilla if you remember and maybe a sprinkle of salt too.
