Mexican - Nacho Cheese Sauce 

Because I just can't buy that number 10 can from the store - ugh!

To serve 80:
1 lb butter
2 c white flour
1 gallon whole milk
1 heaping T salt
1 heaping T ancho chili powder
some cayenne to taste
8 lb cheese

Makes about 5 or 6 qts

Reheat and serve in crock pots.

Make recipe to serve 40 to fit in pot:
2 sticks butter
1 c white flour
2 qt milk
2 t salt
2 t ancho chili powder
cayenne
4 lb cheese
Base Recipe to serve 10:
1/4 c butter
1/4 c white flour
2 c whole milk
1/2 t salt
1/2 t ancho chili powder
pinch cayenne pepper
1/2 lb melty cheese like jack
1/2 lb cheddar (mild-med) for flavor

To make a basic white sauce melt butter over medium high heat. Add flour and saute until nutty smelling and golden brown. Stir in milk and bring to a simmer. It will thicken as it simmers. Season with salt, chili powder and cayenne. Take off heat and stir in cheese. Cheese will turn grainy if you simmer it.

To reheat, warm very gently, again so as to not simmer the cheese. Maybe you'll need to add a little milk to restore its creamy texture.
