Fermentation Notes - Soaking Notes 

Convert all the soaked recipes over to just baking soda. Powder is unnecessary.

Soda sweetens (Wild Fermentation book). If a dough is too sour smelling, use a little more soda in it.

Soak (ferment) pancakes and muffins in a warm spot, on the warming zone of my flat top. Turn it on a couple of times during the soak.

Soak (ferment) the quick breads a little longer than overnight. Figure out what's for breakfast in the afternoon!
