Muffins - Everyday (24 muffins) 

Same great recipe, just not such a hefty job as making 48!

for applesauce muffins: 1 c 'milk' and
     16 oz (2 c) applesauce in place of all milk.
      add another 1/4 c sugar too.

1   12oz bag cranberries: thaw slightly
  chop on french fry  blade. Toss with
  1/4 c sugar.

3 pears not peeled, diced small,
  dredge pears in flour mixture.
  Sprinkle chopped almonds on top.

2-3 cups slightly thawed blueberries and
  lower the 'milk' to 1 1/2 cups.

*spices and currants
*dried apples and toasted walnuts
*crystallized ginger and dates
*just nutmeg is really good too
20 oz whole wheat pastry flour
2 t baking powder
1/2 t baking soda
1/2 t salt

1 c white sugar
2 eggs
2 c milk, soured with lemon juice
and a little plain yogurt added too.
1/2 c unsalted butter, melted and cooled

Preheat oven to 450* or more. Grind grain and mix in pwd, soda and salt. Melt butter in large bowl. Using wire whip, beat in eggs and sugar. Mix in milk mixture. Gently stir dry into wet with silicone scraper just until moistened. Scoop into silicone muffin cups and bake at convection bake 400* about 15 minutes depending on size and what is in them.
