Muffins - Everyday (24 muffins) 

A simple batter with options!

~Add some things.
for applesauce muffins: 8 oz 'milk mixed with yogurt' and
     16 oz (2 c) applesauce
      add another 1/4 c sugar too.

1   12oz bag cranberries: thaw slightly
  chop on french fry  blade. Toss with
  1/4 c sugar.

3 pears not peeled, diced small,
  dredge pears in flour mixture.
  Sprinkle chopped almonds on top.

2-3 cups slightly thawed blueberries and
  lower the 'milk' to 1 1/2 cups.

*spices and currants
*dried apples and toasted walnuts
*crystallized ginger and dates
*just nutmeg is really good too

~Bake at convection bake 400* about 15 minutes depending on size and what is in them.
~Make the batter.
Stir together:
20 oz whole wheat pastry flour
2 t baking powder
1/2 t baking soda
1/2 t salt

Whip together:
1/2 c unsalted butter, melted and cooled
1 c white sugar
2 eggs

Mix in:
12 oz milk
4 oz whole milk yogurt

Stir dry and wet ingredients together very gently and only until mixed.
