Muffins - Everyday (48 muffins) 

Recipe doubled so you don't have to do too much math in the morning!

for applesauce muffins: 2 c 'milk mixed with yogurt' and
     24 oz (3 c) applesauce in place of all milk.
      add another 1/2 c sugar too.

2   12oz bag cranberries: thaw slightly
  chop on french fry  blade. Toss with
  1/2 c sugar.

6 pears not peeled, diced small,
  dredge pears in flour mixture.
  Sprinkle chopped almonds on top.

4-6 cups slightly thawed blueberries and
  lower the 'milk' to 3 cups.

*dried apples and toasted walnuts
*crystallized ginger and dates
*just nutmeg is really good too

~Bake at convection bake 400* about 15 minutes depending on size and what is in them.
40 oz whole wheat pastry flour (8 c flour)
1 T baking powder
1 t baking soda
1 t salt

1 c unsalted butter, melted and cooled
2 c white sugar
4 eggs
24 oz milk
8 oz whole milk yogurt

~To make simple cupcakes, increase butter from 1 cup to 2 cups (1 lb). Increase sugar to 4 cups. Decrease 'milk' to 3 cups.
Mix dry into wet ingredients a little more
thoroughly using wire whip.
