Muffins - Everyday (48 muffins) Recipe doubled so you don't have to do too much math in the morning! -options-
for applesauce muffins: 2 c 'milk mixed with yogurt' and 24 oz (3 c) applesauce in place of all milk. add another 1/2 c sugar too. 2 12oz bag cranberries: thaw slightly chop on french fry blade. Toss with 1/2 c sugar. 6 pears not peeled, diced small, dredge pears in flour mixture. Sprinkle chopped almonds on top. 4-6 cups slightly thawed blueberries and lower the 'milk' to 3 cups. *spices and currants *dried apples and toasted walnuts *crystallized ginger and dates *just nutmeg is really good too ~Bake at convection bake 400* about 15 minutes depending on size and what is in them. 40 oz whole wheat pastry flour (8 c flour)
1 T baking powder 1 t baking soda 1 t salt 1 c unsalted butter, melted and cooled 2 c white sugar 4 eggs 24 oz milk 8 oz whole milk yogurt ~To make simple cupcakes, increase butter from 1 cup to 2 cups (1 lb). Increase sugar to 4 cups. Decrease 'milk' to 3 cups. Mix dry into wet ingredients a little more thoroughly using wire whip.
