Dip, Creamy White Bean Dip 

Really good warm or room temperature.

2 T white wine vinegar
1/8 t crushed red pepper
salt and paprika to taste
1/4 c heavy cream to taste

* optional: omit heavy cream and
                add about 1/4 c olive oil.
2 c white beans (cannellini preferred)
    but any other white bean will do too
2 onions chopped coarsely
1 bulb of garlic
1 t rosemary

Soak beans overnight if possible.  Drain then add just enough water to cover by an inch.  Add onions, garlic, and rosemary or saute them first then add beans and water.  Simmer beans until soft.  Add white wine vinegar and red pepper, salt and paprika.  Remove from pan and blend in blender until very smooth.  Serve warm or room temperature.
