Doughnuts - Baked Chocolate Cake 

Chocolate doughnuts baked in doughnut shaped pans.

4 eggs
1 1/3 c sugar
2 t vanilla

1 c milk
1/4 c melted unsalted butter
3 c spelt flour (15 oz grain)
1 c unsweetened baking cocoa
2 t baking powder
1 t salt

Preheat oven to convection bake 400*.  Combine flour, cocoa, powder and salt in med sized bowl with whip or fork.  In mixer bowl with wire whips beat eggs with sugar and vanilla on speed #2 until thick.  Combine milk and butter.  Alternately add milk mixture and flour mixture to egg mixture in mixer bowl mixing on speed #1 after each addition.  Mix until smooth and soft but do not overmix.  Spray doughnut pans very well and use liquid measure pitcher to pour batter into 24 doughnut shapes.  Fill 1/2 to 2/3 full and turn oven down to convection bake 325* , bake 10-20 minutes until tops spring back when touched lightly.  Cool a but and carefully remove with table knife.
