Cookies - Slow Baking Shortbread 

Long slow baking makes these crisp and flaky.

2 c powdered sugar
2 c (1lb) soft unsalted butter
4 eggs
6 c white flour
2 t baking powder
1/2 t salt

In mixer with cookie paddles, beat sugar and butter until fluffy.  Beat in eggs one at a time.  Stir in flour and powder and salt.  Knead until dough is smooth.  Scoop and flatten with plam of hand until 1/2 inch thick.  Bake 325* 25-30 minutes on ungreased cookie sheet unti light straw colored.
