Muffins - Pumpkin (original recipe) 

Dark spicy cake-like muffins. Rich and comforting on a cold morning!

7 c (35 oz) spelt flour
1 t baking soda
1 T baking powder
1 T salt
1 T nutmeg
2 T cinnamon
1 t cloves
1 c unsalted butter
8 oz brown sugar (1 c)
8 oz white sugar (1 c)
6 oz (1/2 c) molasses
4 eggs
1 - 29 oz can pumpkin

***Try adding 1 c chocolate chips and
2 c toasted walnuts

Preheat oven to 450* or more. Grind grain and mix in pwd, soda, salt and spices. Stir in chocolate chips and walnuts if using them. Melt butter in very large bowl. Using wire whip, beat in sugars and eggs and pumpkin. Gently stir dry into wet with silicone scraper just until moistened. Scoop into silicone muffin cups and bake at convection bake 400* about 15 minutes.
