Muffins - Pumpkin (original recipe) 

Dark spicy cake-like muffins. Rich and comforting on a cold morning!

Preheat oven to 450* or more. Measure flour and mix in pwd, soda, salt and spices. Melt butter in very large bowl. Using wire whip, beat in sugars and eggs and pumpkin. Gently stir dry into wet with silicone scraper just until moistened. Stir in chocolate chips and walnuts if using them. Scoop into silicone muffin cups and bake at convection bake 400* about 15 minutes.
1 c unsalted butter
8 oz brown sugar (1 c)
8 oz white sugar (1 c)
6 oz (1/2 c) molasses
4 eggs
1 - 29 oz can pumpkin

7 c (35 oz) whole wheat pastry flour
1 t baking soda
1 T baking powder
1 T salt
1 T nutmeg
2 T cinnamon
1 t cloves

***Add 1 c chocolate chips and
2 c toasted walnuts
