Bread - Cheese Casserole Bread (Old Recipe) 

Light moist bread with a wonderful cheese taste.

4 1/2 c milk
1 lb grated cheddar cheese

1/4 c sugar
1 T + 1 t salt
2 T yeast
about 12-14 c flour (white or wheat)

In mixer with dough hooks combine sugar, salt, yeast and 4 c flour.  Microwave milk until very warm (or measure hot water and add one packet of dry milk).  Beat milk into flour on speed #2 until it is smooth.  Add rest of flour until no more will be absorbed and a moderately stiff dough is formed (not as stiff as french bread).  Knead on speed #1 1 minute until it is combined.  Mix in cheese.  Rise in warm oven in mixer bowl (place bowl on folded towl to protect from warm rack) 60-90 minutes.  Punch down and transfer to two sprayed round cake pans and two sprayed loaf pans.  Return to warm oven to rise again 20-30 minutes.  Leave in  oven and preheat oven to 375*.  Bake 25-35 minutes until dark golden and loaf sounds hollow when tapped.  Cool on wire rack.
