Mexican - Creamy Salsa Chicken for casseroles 

Make a creamy salsa chicken and white sauce which can be used for a few different 'left-ovres'.

Creamy Chicken Tortilla Casserole -
In 12 inch cast iron skillet layer tortillas, cheese, chicken sauce and bake on convection roast 350* about 15 minutes until bubbly.

Creamy Mexican Chicken and Rice -
Fill 12 inch cast iron skillet or a pie dish with cooked rice. Make a layer of cheese. Spoon  chicken sauce over the top. Bake on convection roast 350* about 15 minutes until bubbly. Serve with tortilla chips and more salsa.

*As with all casseroles give it about 10 minutes to set up before serving.

White Chili -
In 4 qt allclad pot boil about 1 lb of soaked and brined white beans in salty water, maybe with more onions added, or not. When they are tender, drain off most of the water or just keep it if it tastes good to you.

Add a whole bunch of sauteed peppers and onions if you want. Or fire roasted peppers, you hopefully get the idea.

Add the chicken sauce to the beans. Stir in more salsa, or more milk to make a creamy mexican bean soup. Serve with sour cream, cilantro, more salsa and chips.
The night before or a few hours before you need it:
Slice about 3-5 lb boneless chicken into bite sized pieces. Salt so it is flavored from within - about 1 t each pound.

In large allclad pan saute:
2 sticks unsalted butter
4 or so chopped onions
1 t salt sprinkled over

When onions are caramelized add 1/2c white flour and 1 more t of salt. Stir and saute over medium heat until it smells nutty and is golden brown.

Stir in 3 c milk, one cup at a time until smooth. Cook until bubbly and thick.

Stir the raw chicken right into the sauce. Cook it in the sauce only until it begins to loose its pink.

Stir in 12oz - 16oz salsa and heat through. Make sure chicken is white but not overcooked. If using right away it doesn't matter since it is going into the oven now. But if keeping, you want the chicken a little more done.

Now you have a creamy mexican chicken base to make into different main dishes.

*Use salsa verde and jack cheese for quite a different result.
