Cake - Half-A-Pound Cake 

An interesting recipe. It takes a half a pound of butter for each cake, hence the name. Be sure to follow instructions exactly. Makes two cakes.

3 c sugar
8 eggs, at room temperature
2 T vanilla
1 lb softened unsalted butter
1 c milk
4 c white pastry flour
1 T + 1 t baking powder
1 t salt
1 t ground mace

In mixer with cookie whips mix flour, powder, salt and mace to sift them together.  Add sugar, eggs, vanilla, butter and milk all at once.  Beat together on #1 for 20 minutes exactly.  Pour batter into sprayed (with pan spray) bundt pans and/or loaf pans.  Place in COLD oven.  Set temperature to 350* and bake for just 1 hour.  Remove from oven and immediately shake to loosen and tip out onto wire racks.  Cool completely before serving.  Can freeze extra cake.
