Bread - English Muffins (Old Recipe) 

Rich homemade taste dripping with butter, jam, parmesan cheese, or pizza toppings!

2 c whole wheat bread flour
2 eggs
6-7 c white bread flour
3 c milk
1/2 c butter
1/4 c sugar
2 t salt
2 T yeast

Heat milk and butter in microwave until very warm.  Pour into mixer bowl with dough hook.  Add sugar, salt and yeast.  Let set a minute or so until yeast is soft and spongy.  Mix in whole wheat flour.  Add eggs and mix in enough flour to make a smooth batter.  Knead in rest of flour to make a nice soft dough, but not too sticky to handle.  Knead only until well mixed, not more than one minute.  Rise in warm oven about 60 minutes until doubled in size.  With floured hands, form dough into 36 flattened balls (shaped like patties ONE HALF INCH THICK), and place on two lightly floured cookie sheets 3x6 each sheet.  Be sure balls are well floured.  Rise in warm oven until doubled, about 20-30 minutes.  Remove from cookie sheets and bake each muffin on well oiled griddle (about 300-350*) about 8 minutes on each side or until brown.  To serve, split muffins with fork and toast or top with pizza topping, or butter and parmesan cheese...etc.
