Muffins - Oat 

An old recipe that doesn't soak the oats. Today I would soak the oats.

Preheat oven to convection 450* (you will turn it down later).  In mixer bowl with cookie whips, beat butter and sugar until fluffy.  Add eggs one at a time, beating after each addition.  Beat in vanilla.  Mix flour, powder, soda, salt, cinnamon, and nutmeg together. Add dry ingredients all at once and pour in buttermilk.  Mix on speed #2 one minute until smooth.  Stir in almonds.  Gently stir in oats last so they keep their shape.  With scoop filled level, fill 48 muffin cups.  TURN OVEN DOWN TO 400* and bake 20 minutes until muffins are golden brown.
1 c soft unsalted butter
2  c sugar
6 eggs
2 T vanilla

2 c buttermilk

4 c whole wheat pastry flour
1 T baking powder
1 t baking soda
2 t salt
1 T cinnamon
1 T nutmeg
2 c chopped almonds or walnuts
5 c rolled oats
