Cookie Bars, Jam Bars 

Sweet jam sandwiched between chewy oats make these cookie bars sticky, crumbly good!

3 c jam
1 c chopped nuts
2 c white flour
2 c whole wheat pastry flour
1 1/2 c brown sugar
1 t salt
3 c oats
1 lb unsalted butter

In mixer bowl with cookie paddles, combine flour, sugar, salt and oats.  Stir in all but 1/4 c butter mixing well, until coarse crumbs form.  Press 2/3 flour mixture in sprayed cookie sheet (with sides).  Use small rolling pin to even it out and press in well.  Spread with jam.  Top with remaining 1/3 flour mixture and roll lightly to press together.  Dot with the remaining 1/4 c butter.  Bake about 30 minutes at 375* until golden brown.  Cut into bars while still warm, but not hot.
